Apple, cranberry, and spinach sandwich

Prep time: 5 minutes

Cooking time: 2-3 minutes for each sandwich

This is a great sandwich to pack in the lunch box for kids and adults alike. Great for birthday parties or book club or play dates and even picnics.


Any multigrain slice bread (I have used a light Smartbagel*)

Sliced apples

Dried cranberries

Baby spinach (long stems at the end removed)

Cream cheese or Brie 

Olive oil

Salt and pepper to taste (skip salt if using Brie)


Apply cream cheese or brie to one side of each slice of bread. Apply olive oil to the other side of each slice.

Arrange baby spinach, apple slices and dried cranberries on the cheese side of the bread. Sprinkle salt and pepper to taste. Put the other bread slice with cheese side down to assemble the sandwich.

Toast it on a pan with olive oil side on the pan surface. Flip when it is golden brown. Repeat on the other side.

Can be served warm or at room temperature.

*Tip: This sandwich takes on a delicious gourmet form when made with Rye bread and Brie.
I personally like sliced French loaf a lot too. I get mine from Trader Joes.
